    RECIPE INTRODUCTION

    This is such a “delish dish!” I first made it at a friend’s house for her birthday. It was so good for my first attempt. We thought we had just left a Thai restaurant. The meal was THAT good.


    When I returned home from my travels, I made it again four nights in a row! Again, it was just so good. Even my Mom says this is one of her favorite dishes that I make. So, I hope you enjoy this Asian dish just as much as I do.

    EQUIPMENT NEEDED

    Equipment To Make Bart Smith's

    ❑ LARGE POT — Used to boil your noodles for 12 minutes and then cool them down in the same pot for 12 minutes with the burner off. Only remove them AFTER 24 minutes have passed.

    ❑ FOREMAN GRILL — If you'd like to grill your chicken thighs like I do to be included in your Pad Thai dish. Otherwise, you can sauté your chicken or other chosen meat like shrimp or salmon, etc.

    ❑ LARGE FRYING PAN — Used to stir-fry your noodles and mix in your veggies so they steam in the pan from the hot noodles.

    MEDIUM FRYING PAN — Used to marinate your cooked chicken thighs with your stir-fry sauce on MEDIUM to LOW heat while your noodles cook and steam your veggies.

     PLATE OR CUTTING BOARD — Used to cut your veggies, chicken or other meat (optional), etc.

    PASTA SERVING SPOON — Used to spoon out your noodles on to plates when ready to serve.

    INGREDIENTS

    Ingredients To Make Bart Smith's

    Thai Kitchen (Stir-Fry Rice) Noodles — You can find these noodles at almost any grocery store, including Walmart, near their ethnic section.

    ❑ Tsang Stir-Fry Sauce "CLASSIC SAUCE" (Buy 2 Bottles; you may need just a little extra) — You can find this sauce at almost any grocery store, including Walmart, near their International Foods section. Make sure you get "CLASSIC SAUCE" or "GENERAL TSO" and nothing else. Anything else, you risk it being VERY SPICY; too spicy for even my standards.

    ❑ Vegetables — Broccoli, green onions, carrots, mushrooms, and whatever else you might want to put into your Pad Thai dish, such as peppers (all colors), onions, peanuts (optional), etc. For me, carrots, broccoli and green onions are all I use.

    Meat — Your choice, but you could add chicken breasts or thighs, shrimp, mixed seafood medley, (firm) tofu cubes or any combination of those. For me, chicken thighs go best in this dish.

    ❑ Oil — Your choice, but you can sauté your noodles with Sesame oil or my favorite, Grapeseed oil.

    Dash Southwest Chipotle Seasonings — My favorite seasoning for grilling chicken thighs on the Foreman Grill or even sautéing in the frying pan.

    DIRECTIONS

    Step by step directions to make your way to this amazing Pad Thai dish!

    STEP #1
    SLICE UP YOUR VEGGIES

    I like to keep things simple when it comes to veggies in my Pad Thai dish:

    Slice up some broccoli

    Slice up some carrots

    Slice up some green onions

    STEP #2
    COOK YOUR MEAT

    I like to cook my chicken thighs on a Foreman grill and season them with Dash Southwest Chipotle seasonings. Mmmm, yum!!!

    When the chicken is 2/3rd's done cooking, I'll remove it and cut it up in bite-sized pieces then place it back on the grill to finish cooking.

    Once the chicken is done I'll move it to a skillet where I'll add the Tsang Stir-Fry Sauce "Classic Sauce" on LOW heat for 5 minutes. I'm not trying to cook the chicken. Instead, I want the chicken and the stir-fry sauce to get to know each other! 

    STEP #3
    BOIL, THEN STIR-FRY
    YOUR NOODLES

    For 2 people, place 1/2 the box of noodles in a large pot of water. Boil for 12 minutes. Then, let noodles cool in the same pot/water for another 12 minutes. Stir often.

    When noodles are cooled, drain noodles in a colander. Run very hot water over them to wash them. Then, place them in frying pan.

    Place noodles into a large frying pan with oil on the bottom. Stir often on medium/high heat. Prepare to add veggies in 3-5 minutes.

    STEP #4
    ADD SLICED VEGGIES TO
    NOODLES TO STEAM THEM

    After 5 minutes of noodles frying in the frying pan, add veggies to noodles and mix them in so they steam nicely.

    Veggies should steam within 5 minutes or so. Keep them covered with the noodles to help steam them. When done, YOU'RE DONE!

    Now, noodles and veggies are ready to serve on a plate. Get your plates out (or bowls) and top each plate with noodle+veggie combo.

    STEP #5
    ADD MARINATED
    CHICKEN THIGHS

    Now, just add your marinated chicken thighs (or other protein you prepared) and enjoy!!! Feel free to pour a little extra stir-fry sauce on top of your noodle + veggie + chicken thigh combo for more stir-fry flavor!
